Sautéed Spinach with Shallots, Weekly Menu Planner — 15 Comments

  1. I know what you mean about being tired just getting back to normal after a vacation! Congrats on squeaking by with the almost-too-heavy suitcase!

  2. This spinach recipe sounds tasty. Spinach is one of my favorite vegetables and I always enjoy finding tasty new ways of making it. Bookmarked

  3. Did you pre-fry your shallots to golden crispy or did you fry them with the spinach? Oh I love my stir fried vegs sprinkled with golden brown fried shallots!

  4. Wow! I’ve been making something similar, which I know think maybe I will have to feature, just so I can link to this, Katie.
I’m still in recovery mode, not from travel, but from the flu.

  5. What is it that we all need a vacation from vacation ??? Glad to see you are doing the right thing! Have a few glasses of wine and the world will be fine!
    Welcome home Katie!

  6. Happy blog reading, Katie. I’m recovering from the flu and am catching up this weekend also. While I’m not up for a glass, or three, of wine yet, it sounds good the way you write it. 🙂

  7. This spinach looks great! I don’t buy enough of it because it’s so bulky — but hey, it is light to carry!
Welcome home and enjoy catching up — blogs and coffee do go well together, don’t they?

  8. Zoomie, I’m hoping normal starts soon!
Kevin, mine, too! Plus it’s good for the eyes…
Thanks, tigerfish, I totally forgot that part – now corrected (in brown)
Mimi, I managed to miss that…so far! Everyone I saw had it much earlier. Still don’t know why I went in February. Not again!
Slowly, Deb, slowly, my world is righting itself. My little girl dogs cried when they saw me…
Tanna, but my luggage came with me! That was a treat and the first time in a few trips!
Christine, so far no flu… I feel for you though, I’ve heard it’s rough!
Betty, it is light…plus I can plant it soon. I feel spring in the air!

Nice Spinach. I love the story of the suitcase. It is such a problem these days. The airlines are so anal. I’m glad that you got away with those few grams over the limit.

  10. I love making spinach like this – so tasty! Loved yuor “scorecard” of your first 24 hours at home too. No wonder people come back from holiday and feel as if they’ve never been away 😉

  11. I love Spinich, and this looks great. I’m off to the Eco Marche tomorrow to buy some. I’ve just tried your rosemary potatoes and they were delicious. Love your blog it’s great reading, and my husband enjoys your recipes.
