Acorn Squash Soup; Vacation tales from the puppies
How we spent our fall vacation.

We had a fun time while our Human was away on holiday.
Our Other Human didn’t play with us a lot so we had to invent our own games.
Bonnie suggested we see how many new holes we could dig. Here are six of our best.
When we needed a break from digging we rested on the iris bed. It was really comfy…. Until they all broke off.
Other Human was busy and didn’t see us.
Now that we’re bigger girls we need more room to run. This is where I chased Bonnie into our Human’s herb garden. She liked landing in the marjoram; it was soft.
All the herbs were soft until our Other Human forgot to water them and they all dried up.
Our Human was not pleased.
Now that we’re big girls we can jump on top of the hedge. Other Human didn’t like that.
He put a fence around it.
Bonnie got inside the fence and couldn’t find her way out.
Other Human talked really loudly to her.
He’s no fun.

She had been chewing on this acorn squash until our Human caught her.
Seems our Human had promised our Other Human she would make soup out of it
We had lots of fun on our fall vacation….
But we’re glad to have both of our Humans where they belong.
Of course, we’re still digging holes and jumping in the herb garden

Acorn Squash Soup
1 medium acorn squash
1 medium apple
1 medium onion
2 cups chicken stock
2 tsp butter
1/4 tsp powdered ginger
pinch nutmeg
1/3 cup Greek yogurt
10 sage leaves
2 tsp olive oil
Cut squash in half, remove seeds and microwave until tender.
Roughly chop onion. In medium saucepan sauté onion in butter until tender.
Peel and chop apple. When squash is done remove from shell. Add squash, apple, stock, ginger and nutmeg to onions. Heat to boiling, reduce heat, cover and simmer 15 – 20 minutes.
Purée soup.
Stir in yogurt and gently reheat.
Heat oil in a small skillet. Add sage leaves and fry until crisp.
To serve: Ladle into soup plates or bowls and garnish with sage leaves.

Always nice to be welcomed home by our pets, isn’t it? Even when they’ve been naughty, we can’t help but laugh at them.
