How to make a Salad for One, from scratch, in 5 minutes

We’ve been eating a lot of salads.

As usual, I planted enough lettuce to feed all of France.

As usual, I hate to see it go to waste.

So we’ve been eating a lot of salads.

If you want recipes on how to make salad dressing for a larger salad, I have several recipes for vinaigrettes here.

But this post is how to make a quick salad for one.

First, find a nice big salad bowl.

Put a dollop of Dijon-style mustard in the bottom.

Add a bit of vinegar… I used sherry wine vinegar, about a tablespoon.

Whisk well.

Salad olive oil

Add a good olive oil, a little at a time, whisking after each addition.

I used about 1 1/2 tablespoons.

Salad dressing

Add lettuce and toss well with 2 forks.

Then add all of your favorite salad stuff.

I added a chopped hard boiled egg, about 3oz (90gr) of tuna, a few cherry tomatoes, and a bit of Colby-type cheese.  I drizzled a bit more sherry vinegar over the top and tucked in.

A healthy, filling lunch in just 5 minutes…..

Assuming the egg is already cooked and the lettuce already picked and washed.  I do that in the evenings while mon mari is grilling dinner.

  1. I love this post. So obvious and simple yet we all need to be reminded every once in a while how fast and easy it is to eat well.

  2. Love this easy take on salad dressing. I make mine in a (empty and cleaned) Bonne Maman jam jar but can see how simple and more efficient it is to make it this way for one. Heck, even two! Too much lettuce? That just can’t be a bad thing.

    Jamie, I like to do things the easy way… and I like salads. Plus I have those great big pasta bowls that are perfect for salads LOL
    Meredith, funny – the bunnies have never eaten the lettuce. I find signs of them in the potager all the time, but nothing eaten.
    Christine, this is so simple – and no extra jar to wash. For salads for both of us I just use the big salad bowl, same system….
