Lemon Chicken Salad

Lemon marinated chicken and a lemony Honey Mustard Vinaigrette, give this salad a fresh, citrus flavor. 

Use any greens that are in season, but I especially like multi-colored Romaine for this.

Lemon Chicken Salad  

Preparation and cooking time: 30 minutes
  
 Ingredients:

  • 2 chicken breasts, boneless, skinless
  • 5 tbs fresh lemon juice
  • 3 tbs olive oil
  • lettuce – enough for 2 main course salads
  • 5oz (150gr) green beans
  • 1/2 cup (3oz, 90gr) cherry tomatoes
  • 1/2 red bell pepper
  • 4oz (125gr) mushrooms
  • 2oz (60gr) feta cheese
  • 2 tbs freshly snipped chives
  • 2 tbs freshly snipped basil – lemon basil would be wonderful if you have any
  • Honey Mustard Vinaigrette
  • 1 1/2 tbs honey
  • 1 1/2 tbs course grain mustard
  • 1 1/2 tbs lemon juice
  • 4 tbs good olive oil

Lemon Chicken Salad
 Instructions:

  • In small bowl whisk together 4 tbs lemon and 2 tbs olive oil.  Pour over chicken and marinate for 15 minutes.
  • Prepare lettuce, tear and put into a large salad bowl. 
  • Top and tail beans and cut into 1 inch lengths.
  • Cut the pepper into matchsticks. 
  • Clean and thickly slice mushrooms.
  • Heat 1 tbs olive oil and 1 tbs lemon juice in a medium nonstick skillet until sizzling. 
  • Add mushrooms, beans, peppers and quickly stir-fry for 2 minutes. 
  • Remove and set aside.
  • Cut cherry tomatoes in half
  • Crumble feta
  • Cook chicken breasts on barbecue grill for 10 – 15 minutes, turning once, or until done.  They are done when no longer pink and juices run clear. 
  • Or you can sauté them in a nonstick skillet for about the same amount of time.  Remove chicken and slice. 
  • Honey Mustard Vinaigrette
  • In small bowl whisk together the honey, mustard and lemon juice. 
  • Slowly whisk in oil.  It will be fairly thick – which means you have to toss well to avoid 'over-dressing'.
  • To assemble
  • Toss lettuce with some of the vinaigrette. 
  • Add all remaining ingredients and toss gently. 
  • Drizzle with a bit more vinaigrette and serve, with any remaining vinaigrette on the side.

  1. Yes, I frequently come up with recipe ideas that I think no one has ever thought of, only to do research either before or after making it, and finding that it’s old hat.

  2. It is true with recipes and true with life experiences. So, we are going to Paris. It is the first time for us. Everyone has been there and I know what people say about it, but I have to make my own experience. I only hope that I am totally receptive to what I see. Somehow, I know that I will be thrilled. I may make up a new word for it. Totally original. Will let you know.
