Barley, Zucchini and Goat Cheese Casserole

I've had a bad day (see below).

I made this in August and loved it.

I don't have any zucchini left, but, as I'm in the mood for comfort food…. I think I'll try it with chard tonight.

I need comfort food!

Barley, Zucchini and Goat Cheese Casserole 

Preparation and cooking time: 45 minutes

 Ingredients:

  • 1/3 cup quick-cooking barley
  • 2/3 cup chicken stock
  • 1 small – medium zucchini, sliced
  • 2 shallots, sliced
  • 2 tsp olive oil
  • 1/4 cup (2oz, 60gr) soft goat cheese
  • 3oz (90gr) aged goat cheese, sliced
  • lots of fresh basil
  • 1/4 cup (1oz, 30gr) grated Parmesan

Barley Zucchini

 Instructions:

  • Cook barley in chicken stock until tender.
  • Sauté shallots and zucchini in oil until shallots are tender and zucchini starts to wilt.
  • Put half of the barley in a small casserole.
  • Spread the soft goat cheese on the barley.
  • Arrange all the zucchini / shallots on top.
  • Top with the sliced goat cheese and all of the basil.
  • Spread the rest of the barley over the basil.
  • Sprinkle with Parmesan and bake, covered, at 375F (190C) for 15 minutes.
  • Uncover and bake 10 minutes longer, until lightly browned.
  • Remove and serve directly from baking dish.

Why do you keep changing the rules? 

And when you change the rules, why don't you tell me?

Do you think it's funny to always make me find out the hard way?

Dear WordPress Weaver II Pro guys,

I know Google is bigger than you are.

I know that Google can sometimes seem like a know-it-all.

I understand that it must be frustrating when they make a change and irritating when the insignificant blogger (me) asks you for help because of it.

But I DO pay for the priviledge of asking for your help…. I really don't think ranting about Google being 'Big Business' and telling me 'You have a problem?  Too bad – nothing we can do about it' is a a very nice answer.
