Karen, aka Baking Soda, of Bake My Day and our host kitchen for the month, has been dreaming of stacks of flat bread and steaming bowls of spicy curry.
According to Karen: ‘A parantha/paratha is an Indian unleavened flat-bread. The word Paratha (Parantha in Punjab) is an amalgamation of the words parat = layers and atta= flour. They are supposed to be crisp and brown on the outside and the inner part should consist of thin and soft layers.’
Her recipes has them stuffed with a potato / herb mix, but suggests that spinach or leeks or whatever would be equally delicious. Have some fun!
A word of warning though…. Rumor has it that these disappear very fast, so best to make them alone if you want to get your share.
