Oven Fried Cod with Tartar Sauce; 45,000 dill seeds

Friday night fish fries were everywhere when I was growing up.

Standard fare was walleye fillets, dipped in beer batter and deep-fried. The fish was served with coleslaw, fries and, of course, tartar sauce.

Normally it was an ‘all-you-can-eat’ dinner.

I have no idea if they still exist or, if they do, what kind of fish is being served.

I can’t get walleye and I don’t deep-fry anything,

But this was very close and satisfied my craving perfectly.

Oven Fried Cod with Tartar Sauce

Total time: 30 minutes

Ingredients:

  • 12oz (360gr) cod, cut into 4 or 5 pieces
  • 1 egg
  • 1 tbs Dijon-style mustard
  • 1/4 cup bread crumbs
  • 1/4 cup Parmesan, grated
  • 1 tsp Herbes de Provence
  • 1 tbs olive oil
  • Tartar Sauce:
  • 1 tbs Dijon-style mustard
  • 4 tbs Greek or plain yogurt
  • 3 tbs mayonnaise
  • 3 tbs chopped dill pickle
  • 1 tbs chopped capers
  • 1/2 tsp dill weed
  • 1 tsp dried chives

Overn Fried Cod

Instructions:

  • Put egg, mustard in a flat bowl and whisk well
  • Put crumbs, Parmesan, Herbes in another flat bowl and stir to combine
  • Dip cod in egg mixture, then crumb mixture
  • Lay on lightly oiled baking tray.
  • Bake in 400F (200C) oven for 15 – 20 minutes, depending on thickness, turning once.
  • Serve with Tartar Sauce.
  • Tartar Sauce:
  • Mix all ingredients, at least 10 minutes before using.

In keeping with the Friday Fish theme….

Last year I found a great site for buying seeds for my potager. It’s a French site and they sell seeds in small quantities. One really does not need 100 zucchini seeds when feeding two people.

The seeds come in small packets of anywhere from 10 seeds for zucchini and other squashes to 100  – 200 seeds for radishes and lettuces. Obviously one can order multiples for more seeds.

I thought it was a great idea.

Last week I ordered seeds from them.

They didn’t have some of the seeds I was looking for so I decided to check out Amazon.uk (England). I figured I would stand a better chance of finding seeds that could be delivered to France than on Amazon US.

I was right.

And the best part was I could also tell the quantity of the seeds I was ordering.

I got the order today.

It was perfect.

All the seeds were in small, clear bags, neatly labeled.

Exactly what I ordered.

Except someone misread one part of my order.

Instead of getting 1 small bag of dill seeds I received 9 big bags.

I have 45,000 dill seeds.

That’s not a typo…. 45,000 dill seeds.

I like putting fronds of fresh dill on fish when we grill it, but…. 45,000?

I may have to re-think my summer plans…..

  2. 45000!?!! And with dill growing like a weed anyway. Maybe you could plant most of them in a corner of the garden and put up a big sign saying “this way swallowtail butterflies” with flashing arrows pointing to the dill patch. Then maybe your carrots will be safe from marauding larvae.

    Mmmmm, the cod and tartare sauce sounds wonderful!

    Elizabeth, I don’t think we have any swallowtail butterflies…. I’ll ask my friend in Spain – he’s an expert. And I can’t grow carrots…. ground is too hard. I’ll keep thinking on it…
