Chicken and Peppers, Slow cooker; progress… maybe

I think our internet is working properly.

Maybe.

I’ve spent hours on the phone explaining the problem (it slows to a crawl every evening).

After suggesting it was my desk lamp, and having me jump through a bazillion hoops they declared themselves ‘puzzled’.

A technician was meant to come to the house yesterday to sort it all out.

He showed up Saturday.

Amazingly enough, he couldn’t find anything wrong with anything. I had told them repeatedly that it worked fine during the day.

He suggested it was the humidity / rain.

Then he went out and checked the lines coming in. He said they were old and he was going to have them replaced.

They were replaced today.

Our internet worked perfectly tonight.

Somewhat puzzling is the fact that it also worked perfectly Friday night and Sunday night but not Saturday or Monday.nights.

I still maintain that they need to increase the capacity of their servers but….. what do I know.

On the positive side – they do seem to be taking my complaints seriously.

This was seriously good chicken.

Chicken and Peppers, Slow Cooker

Total time: 5 hours

Ingredients:

  • 4 chicken thighs, skinless
  • 1 onion, roughly chopped
  • 1/2 yellow pepper, chopped
  • 1/2 red pepper, chopped
  • 1 rib celery, chopped
  • 3 cloves garlic, mince
  • 1 tsp chicken base
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 cup (8oz, 240gr) tomatoes, peeled, chopped

Instructions:

  • Put onion, peppers, celery, garlic, chicken base, chili powder and oregano in the bottom of the slow cooker. Stir to combine.
  • Lay chicken on top.
  • Top with tomatoes.
  • Cover and cook on low for 5 hours.
  • When ready, remove to a platter and serve.
