Do you like Ramen?
Or just noodles of any sort?
I love noodles and pasta of every size, shape or nationality (including Ramen)
This is also a re-post, the original having been done years ago (as usual) but, as we have been eating a lot of meatballs lately I decided to do a short series of meatball posts.
Why not?
The weather has been too miserable to get the grills out, which we are usually using at this time of year; I have gone through my list of ‘fun things to cook this winter’; and we both love meatballs.
And spaghetti….
This is based on a recipe from one of my Williams Sonoma books – although I no longer know which one.
It requires both a fork and a spoon….
The garlic can be made anytime in advance. Just chill garlic and broth until needed.
Garlic Spaghetti and Meatballs
Total time: 1 hour 30 minutes
Ingredients:
- Broth:
- 1 head garlic, separated, not peeled
- 2 cups (16oz, 480ml) chicken broth
- 1 tsp dried thyme
- 1 tsp peppercorns
- Meatballs:
- 12oz (360gr) ground beef
- 1/4 cup mashed garlicf
- 2 tbs dried bread crumbs
- 2 tbs grated Parmesan
- 1 egg
- 2 tbs white wine
- 1 tsp dried thyme
- 4oz (120gr) spaghetti
- 2 cups (16oz, 480ml) chicken broth
- 1/2 cup Parmesan, freshly grated
Instructions:
- Put the garlic, chicken broth, thyme and peppercorns in a small baking dish.
- Cover and bake for 1 hour at 325F (160C).
- Strain broth and reserve.
- When cool enough to handle, squeeze the garlic out of the skins and mash with a fork.
- In medium bowl combine egg, 1/4 cup of the garlic, crumbs, Parmesan, wine and thyme. Mix well.
- Add beef and mix well.
- Form into small meatballs, about 1″ (2.5cm) in diameter.
- Heat reserved chicken stock plus the additional 2 cups in a large skillet.
- Add meatballs, being careful that they don’t touch.
- Cover, reduce heat and simmer until done, turning the meatballs once, about 15 minutes.
- Cook pasta according to package directions.
- To finish:
- Divide the pasta into two large, flat, pasta bowls.
- Ladle half the meatballs and stock into each bowl.
- Top with Parmesan and serve.
Today is a very important doggie day.
Well, actually, they don’t care in the least…. Other than me making a big deal out of it and giving them extra big rawhide chewies….
They are 7 years old today.
Where did the time go.

I remember when they were so tiny. Where does the time go?
Really – it does seem like yesterday that they were hiding under the furniture.
Happy belated birthday to the doggies! Hard to believe it’s been that long. Don’t you sometimes wish they’d have stayed that small? 😉
It is hard to believe…. That small? Nah…. One should not have to bend over to pet a dog…. nor carry it. lol
