Bread Baking Babes visit my old neighborhood: Catalonia!

The Bread Baking Babes baked a Catalan bread this month….

Actually, it’s really more like a Catalan pizza.

After having lived in Andorra for 7 years, and spending lots of time in Catalonia, I was rather puzzled that I had never heard of ‘coques’.

Then I realized that I had only ever seen the singular ‘coca’ as they are meant to be single serving snacks.

Obviously, if one is making the dough from scratch, as a Babe would, one is making more than one coca.

The topping is very traditional in Catalan cuisine: roasted peppers and onions.

If one added roasted eggplant the topping would be like escalivada which is almost the national dish.

Karen, of Karen’s Kitchen Stories, is our host kitchen for the month and her ‘Coques’ are gorgeous.

And it is nice to see two of my favorite Spanish flavors in the topping: olive oil and sherry vinegar. (Did you know that Spain is the biggest producer of olive oil?)
