Easy Home-Made Salad Dressings

I seem to be breaking all of my self-imposed, arbitrary rules lately.

In this case I’m posting multiple recipes at the same time.

I could drag it out, do six separate posts with photos, but that would be excruciatingly boring for everyone.

Besides, photos of salad dressings are bland at best.

And I wanted to do this before salad season is over and we’re on to soup.

I did take a photo of a salad so there is a little color…..

Creamy Herb Dressing (aka Ranch)

Total time: 5 minutes

Ingredients:

  • 1/2 cup (4oz, 125ml) Greek or plain yogurt
  • 1 tbs Dijon-style mustard
  • 1 tbs white Balsamic vinegar or white whine tarragon vinegar
  • 1 tbs fresh snipped chives        Substitute 2 tsp dried
  • 1 tbs fresh snipped oregano     Substitute 2 tsp dried
  • 3 tbs good olive oil

 

Simple salad with Creamy Yogurt Dressing
Instructions:

  • In small bowl whisk yogurt, mustard and vinegar.
  • Add oil, a bit at a time and whisk well.  Add herbs. This will keep a week, refrigerated.

I used the Creamy Herb Dressing on this simple side (or lunch) salad of greens, shredded carrot, baby mozzarella and cherry tomatoes.

Honey Mustard Vinaigrette

Ingredients:

  • 1 1/2 tbs honey
  • 1 1/2 tbs course grain mustard
  • 1 1/2  tbs fresh lemon juice
  • 4 tbs good olive oil


Instructions:

  • In small bowl whisk honey, mustard and lemon juice.
  • Add oil, a bit at a time and whisk well.

‘French’ Dressing

Ingredients:

  • 2 tbs ketchup
  • 1 tsp Dijon-style mustard
  • 1 tbs red wine vinegar
  • 1/4 tsp paprika
  • 3 tbs good olive oil


Instructions:

  • In small bowl whisk ketchup, mustard, paprika and vinegar.
  • Add oil, a bit at a time and whisk well.

Balsamic Vinaigrette

Ingredients:

  • 1 tbs Dijon-style mustard
  • 2 tbs Balsamic vinegar
  • 1 clove garlic, crushed
  • 1 tbs fresh snipped chives        Substitute 2 tsp dried
  • 1 tbs fresh snipped basil     Substitute 2 tsp dried
  • 5 tbs good olive oil


Instructions:

  • In small bowl whisk mustard, garlic and vinegar.
  • Add oil, a bit at a time and whisk well.  Add herbs.

Oriental Vinaigrette

Ingredients:

  • 2 tbs brown sugar, unpacked
  • 2 1/2 tbs red wine vinegar
  • 1 tbs fresh snipped parsley        Substitute 2 tsp dried
  • 1 tbs water
  • 2 tsp oil – sesame or walnut
  • 2 tsp soy sauce


Instructions:

  • In small bowl whisk all ingredients well. This does not emulsify.

Thousand Island Dressing

Ingredients:

  • 1/2 cup (4oz, 125ml) Greek or plain yogurt
  • 2 tbs ketchup
  • 1 tbs white Balsamic vinegar
  • 1 tsp soy sauce
  • 1 tbs capers, chopped
  • 1 tbs fresh snipped chives        Substitute 2 tsp dried
  • 2 tbs good olive oil


Instructions:

  • In small bowl whisk ketchup, yogurt, soy sauce and vinegar.
  • Add oil, a bit at a time and whisk well.
  • Add capers and chives.
