Spicy Pork Chops, Red Peppers, & Tomatoes, Slow Cooker

Slow Cooker Pork & Peppers

If you are ambitious, shred the pork, add it to the sauce, and serve over pasta.


  • 14oz (400gr) pork chops, boneless, cut in half
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 1/2 red pepper, chopped
  • 2 cloves garlic, minced
  • 1 tbs Worcestershire sauce
  • 1 tbs ketchup
  • 1 tsp dry mustard
  • 1 1/2 tsp chili powder, divided
  • 1/4 tsp celery salt
  • 1/2 tsp oregano
  • 1 tbs tapioca
  • 1 cup (8oz, 240gr) peeled, chopped tomatoes


  • Combine onions, celery, garlic, pepper, oregano, mustard, 1 tsp chili powder, ketchup, tapioca, and tomatoes in the slow cooker.
  • Top with the pork.
  • Sprinkle pork with Worcestershire sauce, then 1/2 tsp chili powder and salt..
  • Cover and cook on low for 6 hours, turning pork once..
  • Spoon onto a platter and serve.


My small slow cooker, which I use for this, gets quite hot so there is no problem with lifting the cover and stirring half way through.
