Brussels Sprouts Salad

Winter salads can be made with lots of different veggies – like Brussels sprouts!

Ingredients

  • 1216 Brussels sprouts, trimmed
  • 23 shallots, roughly chopped
  • 2oz (60gr) bacon, chopped
  • 2 tsp olive oil
  • 1 tbs Balsamic vinegar
  • 1 tbs good olive oil

Instructions

  • After trimming sprouts remove as many of the outer leaves as possible. Set aside
  • Cut the remaining centers of the sprouts in quarters.
  • Sauté bacon and shallots in 2 tsp olive oil in a medium skillet over medium heat until shallots are tender and bacon crisp..
  • If there is a lot of bacon fat remove some of it.
  • Add Brussels sprout quarters and sauté, stirring frequently, until just tender, 4 – 6 minutes.
  • Add Brussels sprouts leaves  and sauté, stirring frequently, until they start to wilt.
  • Add vinegar, good olive oil, and stir well to combine.
  • Divide onto two plates and serve.

Notes

You could use all leaves or just slice the sprouts into thin rounds…. shape isn’t important.
