Zucchini & Goat Cheese Crumble

An easy side dish of layers of onion, zucchini and goat cheese with a simple crumb topping.


  • 1 medium zucchini, 8″ (20cm) long, sliced 1/8th” 
  • I medium onion, halved, sliced thinly
  • 3oz (90gr) goat cheese, sliced 1/8th” (.3cm) thick
  • 1 tbs olive oil
  • 1/2 tsp paprika
  • 1/4 cup (1oz, 30gr) bread crumbs
  • 1/8 cup (1oz, 30gr) butter, melted


  • Fry onion in olive oil until tender, set aside
  • In a medium baking dish layer half of the zucchini – single layer, touching but not overlapping.
  • Spread the fried onions over the zucchini
  • Lay the sliced goat cheese on the onions, also single layer.
  • Top with another layer of zucchini.
  • Combine the bread crumbs and paprika, Sprinkle over the top.
  • Drizzle the melted butter over all, cover and bake for 20 minutes, 400F (200C).
  • Uncover and bake 10 minutes longer.


Keeping each layer flat allows this to bake in 30 minutes. To increase recipe, either use a larger baking dish, or make a deeper Crumble, adjusting baking time accordingly (with 2 layers of everything I would increase covered baking time by 10 minutes.)
