Chicken Thighs in Red Wine, Slow Cooker

Chicken in Red Wine

This is not a proper Coq au Vin, but it is a very easy version that tastes almost the same.
Serve with simple boiled, buttered potatoes or pasta.


  • 4 chicken thighs, boneless, skinless
  • 4 medium shallots, cut in half
  • 1 cup (8oz, 250gr) tomatoes, peeled, chopped, all juices reserved
  • 2/3 cup (5oz, 150ml) red wine
  • 2 tbs tapioca
  • 2 tbs parsley
  • 1/4 tsp salt
  • 1/2 tsp cocoa powder, pure cocoa


  • Put shallots into the slow cooker.
  • Add tomatoes, tapioca, parsley, salt, cocoa, and stir combine
  • Top with chicken thighs.
  • Pour the red wine over all,
  • Cover and cook on low for 5 hours, stirring / rearranging chicken once if possible.


I use celery salt but use any you like. The cocoa powder adds a depth of flavor to the sauce but can be omitted if you don’t have it.
You can substitute cranberry juice or apple juice for the wine, or use chicken stock plus 1 tbs Balsamic vinegar.
