This is not a proper Coq au Vin, but it is a very easy version that tastes almost the same.
Serve with simple boiled, buttered potatoes or pasta.
I use celery salt but use any you like. The cocoa powder adds a depth of flavor to the sauce but can be omitted if you don’t have it.
You can substitute cranberry juice or apple juice for the wine, or use chicken stock plus 1 tbs Balsamic vinegar.
