Chicken with Capers, Slow Cooker

Lemon Caper Chicken

Chicken Piccata  ! This was an easy, flavorful slow cooker chicken main course with lemon, capers and tarragon. No pre-cooking needed. Lemon, capers and tarragon


  • 4 chicken thighs, skinned
  • 46 shallots, chopped, about 1 cup
  • 2 tsp savory
  • 2 tsp tarragon
  • 1/2 tsp sumac
  • 1/2 cup (4oz, 120ml) white wine
  • 1/2 cup (4oz, 120ml) chicken stock
  • 1 tbs Dijon-style mustard
  • 2 tbs tapioca
  • 4 tbs capers
  • 1 lemon, sliced, seeds removed


  • Combine herbs, wine, stock, and mustard.
  • Put half of the shallots in the bottom of the slow cooker.
  • Sprinkle 1 tbs tapioca and 2 tbs capers on shallots.
  • Add half of the ‘sauce’ and stir to combine.
  • Top with chicken.
  • Put the rest of the shallots, tapioca and capers on top of the chicken.
  • Pour the rest of the sauce over all.
  • Top with the sliced lemon.
  • Cook on low, 6 hours. 
  • Turn chicken and stir once after 4 or 5 hours if so inclined.
  • Remove chicken to a platter, spoon over and serve.


I use tapioca as a thickener in the slow cooker because it can be added at the beginning.10
