Did someone mention goat cheese?
I love goat cheese…. soft and creamy or aged and crumbly or anything in-between.
We should have goats…..
But we live in France and there are almost as many goat cheeses here as there are cow cheeses. There are a few sheep cheeses, too…
I digress…. this is supposed to be about bread.

So imagine some smoked salmon or maybe a good Iberian ham on this bread that has goat cheese… On a plate with some fat green olives stuffed with pimientos and a glass of a wonderful red wine from Ribera del Duero.
Right…. the bread.

Now, why didn’t I think of serving fat green olives stuffed with pimientos and a glass of a wonderful red wine from Ribera del Duero with our Pavé? Drat! And us with no pavé left.
I know the store shelves are on the empty side right now, but I suspect there are still plenty of jars of fat green olives with pimientos left. So many misguided people don’t think of olives as essentials. (They’re too busy filling their carts with toilet paper….)

We love all goat cheese as well. I may have changed my mind and will reduce the butter next time.
There is always goat cheese in my fridge….

Just look at all of those lovely breads. The crumb is fabulous on all of them. And cheese, yum!
