Lemon Chicken and Spinach Salad; normal?

This is a spring dish…. not winter comfort food but not yet summer grilling.

It’s another favorite of ours. I seem to be revisiting past favorite dishes….

Is any one else doing that?

Maybe it’s a subconscious effort to make life go back to normal.

Of course it’s not working. Life going forward will be different than life in the past, That is as it should be. We, as a species, should be growing and evolving – not devolving as some current evidence suggests. What we’re experiencing now is normal for this month. Hopefully, the normal we live in a year from now will be a better, more enlightened normal than we lived in a year in the past.

Overly optimistic sentiments aside – I’ll get back to the food.

Lemon Chicken and Spinach Salad

The chicken is cooked in a skillet, then the juices divided, reduced and used to finish both the spinach and the chicken, for a quick, fresh spring dish.

Ingredients

  • Chicken:
  • 2 chicken breasts, boneless, skinless, cut in half
  • 2 tbs flour
  • 1 tbs brown sugar
  • 1 tsp paprika
  • 1 tbs olive oil
  • 1/2 cup (4oz, 120ml) white wine
  • 2 tbs fresh lemon juice (1/2 lemon)
  • Salad:
  • 6oz (180gr) fresh spinach, washed, spun dry for salad
  • 2 green garlic, sliced (or  2 green onions, sliced and 1 clove garlic, minced)
  • 2 tbs fresh lemon juice (1/2 lemon)
  • 1 tbs olive oil

Instructions

  • Mix flour, paprika and brown sugar.
  • Roll chicken in flour mixture to coat.
  • Heat a large nonstick skillet.
  • When hot, add oil, chicken and brown well on both sides.
  • Add lemon juice, white wine, cover, reduce heat and simmer 10 minutes, or until done.
  • Sauté green garlic lightly in olive oil.
  • Add lemon juice. Keep warm.
  • Put spinach into a bowl
  • When chicken is done remove and place on two plates
  • Add 2 tbs of the chicken cooking liquid to the green garlic.
  • Turn heat up under the chicken skillet and reduce the rest of the liquid by half.
  • Pour the warm green garlic and juices over the top of the spinach, toss well to coat and wilt slightly.
  • Arrange spinach next to the chicken. 
  • Pour the reduced cooking liquid over the chicken and serve.

Notes

Green garlic is immature garlic, picked before it separates into cloves. It looks like a green onion and has a mild garlic flavor. Like green onion, the entire plant, bulb and leaves, can be used.

Last month my normal was doing all my food shopping online. It actually worked very well.

Well, it worked well because I usually have a well-stocked pantry.

Now that lock-down has partially lifted I’m trying to work out a one week in-store followed by a one week on-line schedule.

First I need to re-stock.

There were some things that just weren’t available on-line for whatever bizarre reason some unknown person thought of,

Tea, for example.

I make a pot of tea in the late afternoon for us. I always use loose tea. Loose tea wasn’t available, only a small selection of tea bags and those were mostly infusions (herbal tea).

Crackers.

I could buy cookies, and toast (the French love pre-toasted bread) but not crackers.

Tomato juice…. You get the idea.

Fortunately, I had enough of everything in the pantry to keep us happy for the 2 months.

I am now re-stocking my pantry – and over the summer I think I will add another 2 months worth of everything. I’m definitely stocking up on bread flour!

Who knows what the winter will bring?

Or would that be WHO knows what the winter will bring.

  1. I’m in the same boat here. I don’t know why, but there are a lot of things I usually buy that aren’t available on the online shopping. So Friday, I’m going to try going into the big box store to stock up. I’ve been in our small meat market/kitschy store but that’s the problem with it. The meat has been well stocked and as fabulous as usual, but they’re a bit of a designer market and there are staples I need that they just don’t have. Or they do and the price is…you get the idea. So, I’ll glove up and double mask and see what I can get.

    This chicken looks delicious! Lemon is the only fruit I’ll make an exception to on protein. I know, I’m weird. 😉

    • I am with you regarding fruit – although I have used orange juice occasionally in marinades… with lemon.
      Went to the supermarket – no flour there, either. Well – cake flour, but no ap or whole wheat.

  2. No smoked salmon here. Really miss that. Chicken spinach & lemon for This dish I can get on line.
