Sausage, Tomato, & White Bean Pasta

White Bean & Sausage Pasta

I like bite-size pasta for this. Use whatever shape you have on hand.

Ingredients

  • 12oz (360gr) sausages, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp paprika, (smoked)
  • 1 tsp cumin
  • 1 tbs olive oil
  • 1 tbs Dijon_style mustard
  • 2 tbs Worcestershire sauce
  • 1 3/4 cup (15oz, 450gr) whole tomatoes, chopped, with all juices
  • 1 3/4 cup (15oz, 450 gr) cannellini (white beans), drained and rinsed
  • 1 1/4 cup (4oz, 120gr) curly pasta 

Instructions

  • Cook pasta according to package instructions.
  • Heat oil in large nonstick skillet over medium-high heat.
  • Add chili powder, paprika, cumin, and sauté 1 minute.
  • Add onion and sauté 5 minutes.
  • Add sausage, garlic, and sauté until sausage is browned, 5 – 7 minutes.
  • Add tomatoes, their juices, and the cannellini, turn heat to low and simmer, uncovered, 10 minutes.
  • When pasta is done, drain and add to skillet, stir to combine and serve.

Notes

For an extra kick you could add some hot peppers.
