Pizza Toast
Thinly sliced tomato would good, as would a bit of cooked bacon.
You could make them smaller for pick-up nibbles to pass around at a party.

- 2 slices soft wheat or white bread
- 2oz (60gr) roasted red pepper, roughly chopped
- 2 tbs chives, chopped
- 2 tsp Dijon-style mustard
- 1oz (30gr) cheese any flavor
Instructions
- Cut the crust off the bread, and cut the corners making a circle
- With the back of a spoon, flatten the bread up to the edge but leaving a ridge.
- Bake the bread, 400F (200C) for 5 minutes. Remove.
- Divide the mustard and spread on the bread, up to the ridge.
- Top the mustard with chives, peppers, and cheese
- Bake for 10 minutes longer, until cheese is melted and edges start to brown.
Notes
I didn’t use pizza sauce as I only wanted a bit of flavor and I think it would have made the bread soggy. A bit of ketchup might work.
