Pizza Toast

Pizza Snacks

Thinly sliced tomato would good, as would a bit of cooked bacon. 
You could make them smaller for pick-up nibbles to pass around at a party.

Ingredients

  • 2 slices soft wheat or white bread
  • 2oz (60gr) roasted red pepper, roughly chopped
  • 2 tbs chives, chopped 
  • 2 tsp Dijon-style mustard
  • 1oz (30gr) cheese any flavor 

Instructions

  • Cut the crust off the bread, and cut the corners making a circle
  • With the back of a spoon, flatten the bread up to the edge but leaving a ridge.
  • Bake the bread, 400F (200C) for 5 minutes. Remove.
  • Divide the mustard and spread on the bread, up to the ridge.
  • Top the mustard with chives, peppers, and cheese
  • Bake for 10 minutes longer, until cheese is melted and edges start to brown.

Notes

I didn’t use pizza sauce as I only wanted a bit of flavor and I think it would have made the bread soggy. A bit of ketchup might work.
