Barbecued Lamb Ribs, Instant Pot

Lamb Ribs

Lamb ribs are small but flavorful. Mine were cut into 2 ribs pieces.

Ingredients

  • 1216 lamb ribs, cut into 2 or 3 ribs sections
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 2 tsp cumin
  • 2 tsp oregano
  • 1/2 tsp celery salt
  • 1 1/2 cups(12oz, 360ml) beef broth
  • 2 tbs ketchup
  • 3 tbs hoisin sauce
  • 1 tbs low sodium soy sauce
  • 1 tbs Balsamic vinegar

Instructions

  • Mix oregano, salt and spices. Rub into both sides of ribs.
  • Put beef broth into Pot. 
  • Add ribs, arranging vertically, if possible.
  • Cook at high pressure for 10 minutes, Keep Warm turned off.
  • When done, do fast release after 10 minutes.
  • Remove ribs.
  • Cook on barbecue grill, with wood chips for smoke if possibe, for 8 – 10 minutes.
  • Baste both sides with barbecue sauce while on the grill.
  • For Barbecue Sauce:
  • Mix ketchup, hoisin sauce, soy sauce and vinegar.

Notes

Cooking the ribs on the barbecue is just to add flavor – they are already fully cooked. Be careful when handling so they don’t fall apart.
You could refrigerate the ribs after removing from the Instant Pot and grill later, for a bit longer, to re-heat.
