Turkey & Mushroom Linguini

Linguini with Turkey & Mushrooms

Chives, both garlic and regular, are always the first thing up in my garden and I love adding them to everything. You can use dried versions, another favorite herb or just skip. 


  • 12oz (360gr) turkey, cut into bite-sized pieces
  • 2 shallots, vertically sliced
  • 4oz (125gr) mushrooms, trimmed, sliced
  • 1 tbs olive oil
  • 1 tbs chopped fresh chives
  • 1 tbs chopped fresh garlic chives
  • 3 tbs whole grain mustard
  • 1/2 cup (4oz (120ml) chicken stock
  • 1/2 cup (4oz, 120ml) white wine
  • 2 tbs cornstarch (maizena) dissolved in 3 tbs water
  • 1/4 cup (2oz (120gr) greek yogurt
  • 4oz (120gr) dry linguini


  • Cook pasta according to package instructions. Drain.
  • Heat oil in medium skillet over medium heat.
  • Add shallots sauté 5 minutes.
  • Add turkey amd sauté for 5 minutes longer.
  • Add chives, mustard, stock and wine, cover and simmer for 10 minutes.
  • Uncover, increase heat and add cornstarch mixture, stirring until thickened.
  • Stir in yogurt, spoon over linguini and serve.


Substitute 1 small – medium onion for the shallots.
The easiest way to ‘chop’ chives is to hold them in one hand and snip them with a kitchen shears.
