Quinoa Pilaf

Quinoa is incredibly healthy and versatile. It can be used as a simple side dish or in salads, pilafs, or a base for stir-fried or curries.


  • 1/2 cup (100gr, 3.5oz) quinoa
  • 1 cup (250ml, 8oz) chicken stock
  • 12 carrots, chopped
  • 1 rib celery, chopped
  • 2 shallots, chopped
  • 1 tbs olive oil
  • 1 tbs white Balsamic vinegar
  • 68 cherry tomatoes, cut in half


  • Put quinoa and stock in a small saucepan, cover and bring to a boil. 
  • Reduce heat and simmer until done, about 15 minutes (or whatever your package says).
  • Heat oil in a small skillet and sauté shallots, celery and carrots for 5 minutes. 
  • When quinoa is done, stir in sautéed vegetables. 
  • Spoon into a bowl and serve, garnished with tomatoes. 


You can substitute regular Balsamic vinegar or white wine tarragon vinegar for the white Balsamic.
