Pasta Salad with Avocado & Goat Cheese

Pasta with Avocado

This is a quick pasta side dish with only 6 ingredients. Great for making ahead and taking to a picnic.


  • 1 1/4 cup (4oz, 120gr) pasta, bite-size
  • 1 ripe avocado, cut into small chunks
  • 3oz (90gr) soft goat cheese
  • 1 tbs olive oil
  • 1 tbs white balsamic vinegar
  • 1/2 cup Greek olives, pitted, cut in half


  • Cook pasta according to package directions.  Drain.  Do not rinse.
  • Combine goat cheese and warm pasta; stir well to combine.
  • Whisk the oil and vinegar.
  • Add the avocado to the oil/vinegar and stir well
  • Add avocado, olives, to pasta, stir gently and serve.


This will keep well, covered, for an hour or 2 at room temp. For longer storage refrigerate, but allow to come to room temp (or close) before serving.
Adding the oil and vinegar to the avocado first will help maintain its color.
