Pasta with Burst Cherry Tomatoes; still the season

Cherry tomatoes are not my preferred tomato. I plant them every year because they are usually ripe before the larger tomatoes and I’m very impatient.

I don’t dislike them…. I’m fickle.

I love them in the early summer but I quickly abandon them when the bigger varieties are ripe.

I have friends who are the exact opposite. They think a beefsteak tomato is a waste of resources.

The other thing I like about cherry tomatoes is that they are consistant. They don’t take a break mid-season but keep on keeping on. When I want tomatoes in my pasta they are always around.

Pasta with Burst Cherry Tomatoes

This is a popular, and simple, recipe. I added chopped shallots for a bit of a flavor boost. I used both yellow and red tomatoes.

Ingredients

Scale
  • 1 1/4 cup (4oz, 120gr) small pasta
  • 1 cup (6oz, 180gr) cherry tomatoes
  • 2 medium shallots, chopped
  • 1 tbs olive oil
  • 1 tbs Balsamic vinegar
  • 1/4 cup (1oz, 30gr) Parmesan, grated

Instructions

  • Cook pasta according to package directions. Drain
  • After pasta has started cooking:
  • Heat olive oil in a large skillet.
  • Add shallots and sauté until tender, about 5 minutes.
  • Add tomatoes and sauté until they start to split, about 5 minutes longer.
  • With a spoon or potato masher smash some of the tomatoes, releasing the liquid.
  • Add vinegar and pasta, stirring well to combine.
  • Sprinkle with cheese, stir again, and serve.

Notes

You can skip the shallots, substitute a small onion., or 2 – 3 green onions.
The sauce is made while the pasta cooks

Pasta with Burst Cherry Tomatoes

I went 3 entire days without a seeing a single huge spider in the house. I was hoping that spider season was coming to a close.

I hoped in vain.

I saw 3 spiders before breakfast.

To be honest, they were not all monsters, but, still – it’s not the best start to my day.

There was one of the smallish ones that are everywhere, spinning webs like mad, this time of year. It was on the cereal box. These spiders have long legs but a barely visible body. I can deal with them and promptly dispatched it.

Then there was a slightly bigger one, maybe 1/2 inch (1cm) on the wall behind the toaster. We startled each other and it was gone before I had to make a decision. Out of sight = out of mind with that one.

Just as I was about to have my first sip of coffee mon mari came down the stairs. He said good morning and, as I looked up to answer him, I screamed instead.

He was not happy with my greeting and I was not happy to see one of the monster spiders on the wall just behind him.

I handed him the large fly swatter.

He looked at me.

We have high ceilings….

I went out to the barn and got a step-ladder.

He dispatched it.

I guess spider season is not over yet.

  1. Awwww, poor spiders! I toss them outside. I just can’t kill them. I figure they’re little lives are just as important to them as mine is to me.
