Miso Ginger Pork, Slow Cooker

Miso Pork

We had this with Asian ‘noodles’ but any pasta / noodles will work.

Ingredients

  1. 12oz (360gr) pork chops, cut into pieces
  2. 1 onion, chopped
  3. 1 rib celery, sliced
  4. 2 cloves garlic, minced
  5. 1 tbs fresh ginger, minced
  6. 1 cup (8oz, 240ml) chicken broth
  7. 2 tbs miso
  8. 2 tbs peanut butter
  9. 1 tbs parsley
  10. 1 tsp paprika
  11. 2 tbs tapioca
  12. 4oz (120gr) noodles or long pasta

Instructions

  • Put the onion, celery, garlic, ginger, and pork in the slow cooker.
  • Mix chicken broth, miso, peanut butter, parsley, paprika, and tapioca.
  • Add to slow cooker, stir well, cover and cook, low heat, for 6 hours.
  • 20 minutes before serving heat water to boiling for noodles / pasta.
  • Cook according to package directions.
  • Drain, divide onto 2 plates.
  • Spoon pork and sauce over and serve.

Notes

I stir this after 4 or 5 hours, just to make certain all the flavors are combined. It’s usually hot enough by then that the heat lost is minimal.
