Sausage & Rice Skillet Dinner

Sausage Skillet

This is an easy, one-skillet dinner for busy week nights – or anytime you want simple. If you want more veggies add 1 or 2 chopped carrots or a cup of chopped butternut squash.

Ingredients

  • 10oz (300gr) smoked sausage, sliced
  • 2 ribs celery, chopped
  • 1 lg onion, chopped
  • 1 small red pepper, chopped
  • 2 cloves garlic, minced
  • 1 tbs olive oil
  • 2 tbs Worcestershire sauce
  • 1 tbs tomato paste
  • 1/2 cup (3.3oz, 95gr) Basmati rice
  • 1 cup (250ml) beef broth

Instructions

  • Heat oil in large skillet over medium heat.
  • Add vegetables, except garlic, as you cut them, sauté until they start to get tender, 5 – 7 minutes.
  • Add garlic, sausage, and sauté until sausage starts to brown
  • Add remaining ingredients, stir well, cover, reduce heat slightly and cook 16  minutes until rice is done. Stir occasionally.

Notes

If you don’t have tomato paste in a tube, substitute ketchup.
