Red Beets (Beetroot) and Red Onions make a great winter salad to add color and flavor to your table.


  • 16oz (480gr) cooked beets (beetroot), sliced
  • 1 medium red onion. sliced
  • 1/4 cup salad olive oil
  • 2 tbs Balsamic vinegar
  • 2 tbs chopped parsley
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika


  • In a deep bowl whisk together vinegar, spices and oil.
  • Add beets, onions, parsley and mix well.
  • Set aside to marinate, at room temperature, stirring occasionally, for 1 – 3 hours.


Use fresh parsley if you can, otherwise dried is fine. I get vacuum-packed cooked beets. Canned, rinsed beets would work. Or get fresh – just boil, peel, and slice.
