We’re getting so fond of the skillet dinners I thought I’d try an oven dinner.
I think the current, popular name is a ‘sheet pan dinner’.
I had to google the difference between a sheet pan and a baking sheet (cookie sheet).
Well, actually, I googled it because I thought there wasn’t a difference and I do like to know that I’m right about something before posting it.
I was wrong.
A sheet pan (according to Google) has a rim all around that is about an inch (2.5cm) high. A baking sheet has little or no rim.
This is a baking sheet dinner.
I (apparently) do not own a sheet pan. I have a baking sheet with a modest, 1/4″ (1cm) rim.

Chicken, Squash, & Potatoes, Roasted
This is an easy dinner from the oven. Use whatever vegetables you have on hand.
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 2 servings 1x

- Method: Roasting
- 2 chicken breasts (12oz, 360gr) total weight, cut in half
- 10oz (300gr) butternut squash, sliced
- 7oz (200gr) white potato, cut into wedges
- 4oz (120gr) sweet potato, cut into wedges
- 2 tsp Dijon-Style mustard
- 3 tbs Balsamic vinegar
- 2 tbs olive oil
- 1 tsp parsley
- 1/2 tsp salt
- 1 tbs ketchup
- 1 tsp soy sauce
- Turn oven on 400F (200C)
- Mix mustard, vinegar, oil, parsley, salt in a large bowl.
- Add vegetables and stir to coat.
- Using tongs or fingers, remove vegetables and lay in a single layer on baking sheet.
- Roast, in pre-heated oven, for 10 minutes.
- While vegetables roast add ketchup, soy sauce to remaining dressing in the bowl and stir to combine.
- Add chicken, stir to coat and let rest.
- After 10 minutes remove baking sheet.
- Turn vegetables and add chicken.
- Return to oven and roast for 20 minutes longer
- Remove and serve.
Use any combination of potatoes you like. I had sweet potato left from another meal.

Who no longer listens to Spotify?
If I want to continue to be able to listen to Neil Young, Joni Mitchel, et al – any suggestions for another streaming service?
I know there are a few out there but I don’t know anyone who listens to any of them. Actually, I’m the only one I know that listens to Spotify – other than an artist friend living on Crete…..
I apparently have boring friends…..

I haven’t listened to Spotify in probably three years now and haven’t listened to Neil Young or Joni Mitchell in probably 30 and wouldn’t start now after everything that’s happened. I have Amazon Unlimited because I have Amazon dots here and at my father in laws across town. We can talk to him and keep track of him that way and he can listen to whatever music he wants to during the day. It’s just easier that way. And we have Sirius in the cars. Beyond that, I use TuneIn sometimes or iHeart Radio. Depends what I’m looking for. I never was a fan of Spotify though. I didn’t like their interface and early on, they used to let ‘artists’ contact users with spammy listen–to-my-music emails and I didn’t like that.

Never heard of the artist contact bit, and I’ve been listening to Spotify for about 5 years…. Years ago I listened to radio365, then Boomer radio – both now gone. We don’t have any ‘virtual assistants’…. no reason not to – just don’t have a reason to have one.

This dinner looks terrific. I used to have a cookie sheet pan but all my cookies get baked on a rimmed sheet pan …
I’ve just started using Apple Music and can’t believe what’s out there.
I’ve used iTunes for years but never tried Apple music…. mainly because we are android users. I may have to re-think…
I wanted to pop and and just say, we’re Android users too and I have never been able to really get anything Apple to play well with it. If I can get it to load, it’s always quirky in some way. I remember radio365! What about Onlineradiobox? There’s always Pandora and Soundcloud too.
There are a lot of choices – and most would work better with a faster internet lol. I forgot about Pandora….
