Roast New Potatoes with Butter & Chives

Mew Potatoes

New potatoes are a wonderful spring treat – if you are lucky enough to find them.


  • 1418 (10oz, 300gr) new potatoes, unpeeled, lightly washed
  • 1 tbs olive oil
  • 1 tbs butter
  • 1 tbs fresh chives, snipped
  • salt and pepper


  • Combine salt, pepper, and oil.
  • Add potatoes and stir to coat.
  • Put into a baking dish large enough for them to be in a single layer.
  • Bake at 400F for 30 minutes.
  • Stir half way through baking time.
  • Remove from oil and put into a small dish.
  • Add butter,  chives, stir well, and serve.


New potatoes are about the size of a walnut.

Calorie info assumes you eat all the oil and butter…..
