Pasta with Carrots & Sage

This is an easy pasta side dish for sage lovers. If you aren’t you can use your own favorite herb.


  • 20 fresh large sage leaves, roughly chopped
  • 3 cloves garlic, minced
  • 1 red onion, thinly sliced
  • 3 carrots, julienned
  • 4 tbs Balsamic vinegar
  • 1 tbs olive oil
  • 1 tbs butter
  • 4 tbs chicken stock
  • 1/2 cup freshly grated Parmesan
  • 1 1/4 cup bite-size pasta


  • Cook pasta according to package directions. When done drain.
  • Heat oil and butter in medium skillet over medium heat.
  • Add carrots, onion and sauté 10 minutes, stirring occasionally for even cooking.
  • Add sage, garlic, and sauté 5 minutes longer.
  • Add chicken stock, vinegar, and heat through.
  • Test a carrot – if not done cover for a few minutes (mine were done)
  • When ready, add pasta and stir to combine.
  • Sprinkle with Parmesan and serve.


The vegetables cook in the same time as the pasta.
