Mushroom Rice Pilaf

This is an easy side dish for fall – and the holidays. Sautéing the rice in a bit of butter adds a certain depth of flavor.


  • 1/2 cup (3.3oz, 95gr) Basmati rice
  • 1 cup (8oz, 240ml) chicken broth
  • 3oz (90gr) mushrooms, trimmed, chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2 tsp butter
  • 1 tbs olive oil
  • 2 tsp soy sauce


  • Heat 2 tsp butter in a small saucepan.
  • Add rice and sauté, stirring for 1 – 2 minutes.
  • Add broth, cover and cook rice for length of time on package.
  • While rice cooks:
  • Heat olive oil in a small skillet.  
  • Add onion and sauté until tender, about 5 minutes.
  • Add garlic, mushrooms and sauté until everything is light brown, about 5 minutes longer.
  • When rice is done add to skillet along with soy sauce.
  • Stir well to combine. Serve.


This is an easy recipe to double or triple.
