Ginger Pork & Rice, Instant Pot

I decided it was time to use my Instant Pot for more than beans.

Although I use it a lot for beans, it does do other things rather well.

Like pork chops.

I’m torn as to which makes pork chops more tender: Instant Pot or slow cooker.

I’ll continue to test this winter….

Ginger Pork & Rice, Instant Pot

I used boneless pork chops for this and they were very moist and tender.

Ingredients

Scale
  • 2 boneless pork chops, 12oz (360gr) total weight, cut in half
  • 1 small onion, chopped
  • 1 rib celery, chopped
  • 2 cloves garlic, minced
  • 2 tbs minced fresh ginger
  • 1 tbs olive oil
  • 1 tsp sesame oil
  • 1/2 cup (3.3oz, 95gr) Basmati rice
  • 2/3 cup (5oz, 150ml) chicken broth
  • 3 tbs sherry
  • 1 tbs soy sauce
  • 2 tsp sesame seeds

Instructions

  • Set the Instant Pot to Sauté for 4 minutes.
  • Add 1 tbs olive oil, onion, and celery. Sauté for 3 minutes.
  • Add garlic, ginger, and sauté for remaining minute.
  • When done, add broth, and stir well, scraping up any browned bits.
  • Add sherry, sesame oil, soy sauce, and stir well.
  • Add rice and stir.
  • Arrange pork on rice.
  • Secure cover, set Instant Pot to High Pressure for 8 minutes.
  • Natural release for 10 minutes then quick release.
  • Spoon pork and rice into a serving bowl.
  • Sprinkle with sesame seeds, and serve

Notes

  • The cooking time includes coming up to pressure.
  • Substitute equal amount of white wine or dry vermouth for the sherry – or 1 tbs apple cider vinegar.

If you don’t want the rice: Instant Pot Pork Chops & Onions

I’m ambivalent about doing the grocery shopping. I neither like it nor loath it. It’s simply something that needs to be done and the more mindlessly I can complete the task the happier I am.

I was required to do way too much thinking and make far too many decisions this week.

Nothing life altering… just irritating.

Both the brands of toilet paper and paper towels I normally buy were not to be found. Did I really need to buy something else or could I wait?

Someone requested salami for his sandwiches…. I spent 5 minutes looking. Nope.

The treats that Guapa loves and always has 2 of while I’m cooking were not on the shelf. Actually, there was nothing from Pedigree on the dog shelves at all.

There is a local brand of tomato sauce that we love. Either they are no longer in business or the store quit carrying it in favor of the big brands. Another 5 minute search with no results.

No orzo in the pasta section.

No Listerine or dental floss. (Wha?)

There were a few more but you get the idea.

It was all things that, in the Before Times (pandemic, war in Ukraine) I could just mindlessly walk buy and toss in my cart, without thinking or searching.

‘They’ say change is good and stimulation is good for the brain.

‘They’ can go….

  1. Oh my goodness your supermarket shelves are empty of the things you prefer !! Very frustrating !! I have had that in Melbourne but not in Morocco as you can never shop here with expectations haha !!!

  2. I’m having that same problem here, things I mindlessly buy that I’ve always bought are suddenly no more and I have to find a substitution. I don’t like that. They’re never close to the same. I’m trying to just buy the stuff when I see it. Sometimes, I end up with a lot that I don’t need right now, but I have it and sometimes, I still can’t find it and substitution it is.

    I’ve used my Instant Pot for hard boiled eggs. Pretty expensive hard boiled egg pot, but I can’t fault it. Best thing ever! Thing 1 uses hers often as a slow cooker more than anything but also as a pressure cooker. I’m still old school there. I have a rocker pressure cooker. I’m trying to get away from it. Really I am. But it’s hard. Did you find the non-stick insert yet? It’s a game changer!

    • A non-stick insert? I don’t do the dishes so I never thought about it lol
      And I haven’t tried it for eggs. Or as a slow cooker. I’m already in a rut… Although I’m using it for chicken stock at the moment – maybe there’s hope for me yet.

      • Yup, an honest to goodness non-stick insert. And it works great and cleans up really nicely. InstantPot makes it so you’re not buying an off brand and you can get it on Amazon. I bought the glass lid too so I can use it as a slow cooker, but I still can’t give up my Crock Pot. Doing a dozen eggs in the InstantPot though for deviled eggs is the bomb! They peel so easy, it’s worth every penny buying the darned thing just for that.

        • I bought the glass lid – but haven’t tried using it as a slow cooker yet. I have 2 slow cookers and they are just old friends. I know how they work for what I want. I’ll check out the insert.
