The excitement of fall vegetables is long past, the holidays are long over, and winter is still stretching out in front of us.
It’s time for easy comfort food.
I rarely do any prep work for my slow cooker recipes.
Sometimes I brown the meat first but more often I don’t bother.
I always give it a stir about an hour before it’s done to make sure the flavors are combined.
As usual, all recipes are for two.

Another easy Slow Cooker recipe – no pre-cooking required.
- Prep Time: 5 minutes
- Cook Time: 6 hours

Ingredients
- 2 pork chops, boneless, cut in half (12oz total, 360gr)
- 1 lemon, seeded, sliced
- 1 onion, roughly chopped
- 2 cloves garlic, minced
- 2 tbs capers
- 1 tbs tapioca
- 1/2 tsp lemon pepper
- 1/2 tsp za’atar
- 1/2 tsp thyme
- 1/2 cup (4oz, 120ml) chicken broth
Instructions
- Combine everything but lemon and pork; put into slow cooker.
- Put pork on onion mixture, top with lemon slices.
- Cover and cook, low, for 6 hours.
- Optional: uncover half way through and turn pork, tucking into the onions.
- Serve when ready
Notes
Bone-in chops, left whole, would work, too.

This is right up my ally. Pork and capers. Is there much better on a cold winter day? And we’re supposed to get four to six inches of snow Friday. The past three days, it’s looked like someone dipped everything in water and quick froze it all thanks to the ice storm we had three days ago. I just got my internet back today.

We got our snowstorm. About 8 inches. I noticed yesterday before it hit, my Hyacinths were just breaking through about two inches. I hope they survive. It’s beautiful outside right now. Quiet. No wind. Perfect for a walk though that won’t be me.
