This isn’t traditional Chicken Cacciatore.
That would be made with a whole, cut-up chicken.
The traditional dish would not be served on pasta – or with pasta or risotto, as some recipes on the internet suggest.
Both pasta and risotto are, traditionally, first courses, not side dishes.
I should call this Chicken, Cacciatore-style…..
But I don’t want to.
This is an easy recipe for 2 with the flavors of Cacciatore.

Chicken Breasts in a flavorful tomato sauce, ready with just 30 minutes of cooking time.
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes

Ingredients
- 2 chicken breasts, boneless, skinless, cut into bite-size pieces
- 1/2 green pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 rib celery, chopped
- 4oz (120gr) mushrooms, trimmed, sliced
- 1 3/4 cups (15oz, 450gr) chopped tomatoes
- 1/4 cup (2oz, 60ml) white wine
- 2 tbs tomato paste
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp Worcestershire sauce
- 1 tbs olive oil
- 4oz (120gr) short pasta.
Instructions
- Cook pasta according to package directipons.
- When done, drain.
- Heat the oil in a large skillet over medium heat.
- Add onion, pepper, celery, and sauté for 5 minutes.
- Add mushrooms, chicken, and sauté for 5 minutes longer.
- Add tomatoes, wine, tomato paste, paprika, Worcestershire and herbs.
- Stir to combine.
- Reduce heat, cover and simmer for 10 minutes.
- Uncover and simmer 10 minutes longer, reducing slightly.
- Spoon over pasta and serve.
Notes
Start cooking the pasta shortly before you ‘uncover and simmer’ – you want both the pasta and the chicken done at the same time.

It was extremely well-packed. (You may note all the dishes on my counter… I was in the middle of prep for a dinner party when the box arrive, but I had to open it. Curiosity and all).
I’ll post a description of everything and more details about Vico tomorrow.
