The theme for Monday posts in April is Asparagus.
Itโs asparagus season and we eat a lot of it for the 5 or 6 weeks itโs available.
We eat green, purple, purple-tipped white, and big, fat white. We love it all.
However, the different types of asparagus are cooked differently. If you try to cook fat white asparagus like fat green asparagus you will be disappointed.

Itโs not tomato season, but I admit to a weaknessโฆ. Cherry tomatoes start appearing in the markets early and I canโt resist them.
My chives are all up and enjoying the spring โ and I am enjoying them.

Cherry tomatoes are not in season, but they were at the market. I liked adding a bit of red to the salad.

Ingredients
- 1 avocado, removed from skin, cubed
- 4oz (125gr) cherry tomatoes, cut in half
- 8oz (250gr) asparagus, roll cut (see notes) into 1 1/2 (4cm) lengths
- 2 tbs fresh, snipped chives
- 1 tbs soy sauce
- 1 tbs balsamic vinegar
- 2 tbs olive oil
Instructions
- Mix soy sauce, vinegar and oil in a medium bowl.
- Blanch asparagus in boiling water for 2 minutes.
- Refresh in cold water, pat dry and add to bowl with vinaigrette.
- Add avocado, cherry tomatoes, and chives to asparagus.
- Stir well to combine and serve.
Notes
To roll cut: cut the end off of the asparagus at an angle, roll 1/4 turn and cut next piece at the angle, roll 1/4 and cut next piece, etc.ย This gives you interesting looking pieces with lots of surface.
