I’ve been getting lazy.

Like many areas this summer, we have had some very hot weather.

I would like to blame that for my lack of interest in cooking.

It seems fair – everything else is blamed on the extreme heat.

But, if I must be honest, I’m just getting lazy.

And mon mari isn’t as hungry when it’s hot.

So we’ve just been eating our favorite foods.

We’ve had many plates of melon with ham, and a lot of caprese salads this summer.

This time I got ambitious – and added pasta.

Pasta Salad, Caprese-Style

I turned my favorite summer starter into a pasta salad! Best of both worlds. Serve as a side or meatless main.

Ingredients

Scale
  • 1 1/4 cup (4oz, 120gr) bite-size pasta, rotini, fusilli, penne
  • 5oz (150gr) mozzarella balls, drained, cut in half
  • 2 medium tomatoes, cut into bite-size pieces
  • 3 tbs fresh basil, large leaves torn
  • Vinaigrette:
  • 1 tbs Dijon-style mustard
  • 3 tbs Balsamic vinegar
  • 3 tbs good olive oil

Instructions

  • Cook pasta according to package instructions. Drain.
  • Put mustard, vinegar, and oil in a large salad bowl. Whisk well.
  • Add pasta and stir well
  • Add tomatoes, mozzarella, basil and stir gently. Serve

Notes

I used 12 mini mozzarella balls. You could use a large one, just cut into chunks.

We have water restrictions, but really, what’s the point?

On the other hand we’ve had a great year for wasps and hornets and the spider season is off to a strong start.

  1. I have more years like the last picture than the first, and I water. I’m not sure it’s the water problem, but I can’t think of any other problem that causes it. Right now, the bane of my existence is the weeds and there are so many at this point, it’s beyond overwhelming. But I’m just still too sore from the accident to want to pull them so for now, they all get a reprieve.

    I like dishes like this. They’re not heavy unless you overeat. They’re tasty. Cool when the weather is way too hot out…yummy!

    • I don’t know how farmers deal with all the uncertainty. I would be (or am) an anxious wreck.
      I harvested all the winter squash and hope that they will keep, despite the sunburn. But most stuff is done and gone but the weeds.
