I’ve been getting lazy.
Like many areas this summer, we have had some very hot weather.
I would like to blame that for my lack of interest in cooking.
It seems fair – everything else is blamed on the extreme heat.
But, if I must be honest, I’m just getting lazy.
And mon mari isn’t as hungry when it’s hot.
So we’ve just been eating our favorite foods.
We’ve had many plates of melon with ham, and a lot of caprese salads this summer.
This time I got ambitious – and added pasta.

Pasta Salad, Caprese-Style
I turned my favorite summer starter into a pasta salad! Best of both worlds. Serve as a side or meatless main.
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 2 servings 1x

- 1 1/4 cup (4oz, 120gr) bite-size pasta, rotini, fusilli, penne
- 5oz (150gr) mozzarella balls, drained, cut in half
- 2 medium tomatoes, cut into bite-size pieces
- 3 tbs fresh basil, large leaves torn
- 1 tbs Dijon-style mustard
- 3 tbs Balsamic vinegar
- 3 tbs good olive oil
- Cook pasta according to package instructions. Drain.
- Put mustard, vinegar, and oil in a large salad bowl. Whisk well.
- Add pasta and stir well
- Add tomatoes, mozzarella, basil and stir gently. Serve
I used 12 mini mozzarella balls. You could use a large one, just cut into chunks.
