This is not a proper Bolognese. I also make that and it’s a longer, more labor intensive recipe.
It’s worth it, of course, but it’s not ‘quick & easy’.

For the record – it’s also not ground beef and tomato soup.
Yes, I actually knew people who thought that was an appropriate spaghetti sauce.
It’s not.

This is an easy tomato & beef pasta sauce – perfect for busy days.

Ingredients
- 4oz (120gr) linguini
- 12oz (350gr) ground beef
- 1 medium onion, chopped
- 3 cloves garlic, crushed
- 1/2 yellow bell pepper, chopped
- 1 tbs olive oil
- 2 cups (15oz, 450gr) tomatoes, peeled, chopped
- 1 tsp smoked paprika
- 1 tsp basil
- 1 tsp oregano
- 1/4 tsp celery salt
- 1/2 cup (2oz, 60gr) freshly grated Parmesan
Instructions
- Cook pasta according to package directions, drain.
- Heat oil in medium skillet.
- Add the onion, garlic, pepper, and sauté over medium heat for 10 minutes.
- Add beef and sauté until cooked through, breaking it up as it browns.
- Add paprika and sauté briefly.
- Add the tomatoes, herbs, salt, and simmer until sauce thickens slightly.
- Divide the pasta between two plates, spoon sauce on top, sprinkle with Parmesan and serve.
Notes
Use any salt you like – I just like celery salt….

After our week in Porto the family broke up and went in various directions. Some headed to Seville, some to Barcelona, and we went to Madrid.
I did something I have never done before.
I’ve spent a lot of time in Spain, in all of the major cities and a lot of the villages.
I have never had this quintessential Spanish treat:
Churros & Chocolate
The churros are a crispy fried dough but it’s the chocolate that I love… Thick and warm and dark and really chocolate-y.
After one is done dipping one drinks the chocolate.

Most of our time in Madrid was spent walking around the city, admiring the parks and buildings.
We managed to pick up Covid somewhere in our travels. Luckily, none of us were very sick (some more than others) but still didn’t think it appropriate to spread the joy by doing a lot of indoor stuff…. Yes, we were masked.
The only part that really bothered us was having to do UberEats, rather than enjoying ‘fine-dining’ at some of the fantastic Madrid restaurants.

You have to taste the real thing in Spain. The French don’t get it right, either.
