Pork Lo Mein

The theme for Monday posts in December is Stir Fries.

Similar to a Skillet Dinner but done in 2 pans, Stir-Fries are fast and a great way to use up both leftovers and the odd bits in the fridge.

In my kitchen the flavors can vary from traditional Chinese to Greek to whatever sounds interesting.

They can be served on rice, as is typical, or barley or quinoa or noodles.

They’re fun, flexible, and we love them. Easy food for a busy month.

Pork Lo Mein

You could serve this over rice or quinoa, but we like pasta for a change. See Notes for substitutions.

Ingredients

Scale
  • 4oz (120gr) spaghetti
  • 12oz (360 gr) pork, cut into bite-size pieces
  • 1 onion, cut in half, sliced
  • 2 cloves garlic, minced
  • 1 tbs minced ginger, minced
  • 1/2 red bell pepper, cut into sticks
  • 1/2 head broccoli, 6oz (180gr), cut into florets
  • 4oz (120gr) mushrooms, trimmed, sliced
  • 1 tbs sesame oil
  • 1 tbs olive oil
  • 1 cup (8oz, 250ml) beef broth
  • 2 tbs peanut butter
  • 2 tbs soy sauce
  • 2 tbs sherry
  • 2 tbs sesame seeds
  • 1 tbs cornstarch (Maizena) dissolved in 2 tbs water

Instructions

  • Cook pasta according to package instructions.
  • While pasta cooks:
  • Heat olive oil in large skillet over medium-high heat.
  • Add onion to skillet and stir-fry for 2 minutes.
  • Add garlic, ginger, and stir-fry another 2 minutes.
  • Remove onions/garlic from pan and set aside.
  • Add sesame oil to pan and heat.
  • Add pork and stir-fry 3 – 5 minutes, until nicely browned.
  • Remove and put with onions.
  • Add broccoli, mushrooms, and pepper to skillet and stir-fry 5 minutes.
  • Return pork, onions, garlic and ginger to pan.
  • Add beef broth and bring to a boil.
  • Cover, reduce heat and simmer for 5 minutes.
  • In a small bowl, whisk together sherry, soy sauce, and peanut butter.
  • Uncover skillet and stir in peanut butter mixture.
  • Add cornstarch mixture, stir until thickened.
  • When pasta is done, drain and add to skillet.
  • Toss to combine, sprinkle with sesame seeds and serve.

Notes

Substitute more olive oil for sesame oil, beef broth for sherry, 1 tsp ground ginger for fresh, skip the sesame seeds.
If your skillet isn’t big enough for the pasta, just divide and serve on 2 plates
