Hot & Sour (Savoy) Soup

Part of the fun of knowing how (or learning how) to cook is being creative.

This is a twist on the traditional Hot & Sour Soup.

Actually, it only bears a slight resemblance, but it’s my kitchen and my blog and you get the idea.

It doesn’t have mushrooms or tofu and it does have green Savoy cabbage.

It’s soup – we make it with the ingredients on hand.

Hot & Sour (Savoy) Soup

The addition of slivered green cabbage adds a bit of texture and crunch.

Ingredients

Scale
  • 2 cups (16oz, 480ml) chicken broth
  • 1 cup (3oz, 90gr) thinly sliced Savoy cabbage
  • 2 green onions, trimmed, thinly sliced
  • 1 tbs soy sauce
  • 1 tbs balsamic vinegar
  • 1 egg, lightly whisked
  • 1 tsp olive oil
  • 1 tsp sesame oil
  • 1 tbs cornstarch dissolved in 2 tbs water

Instructions

  • Heat oils in a medium saucepan.
  • Add onions, cabbage and stir-fry for 5 minutes.
  • Add chicken broth and heat to boiling.
  • Stir dissolved cornstarch into the boiling broth, until thickened.
  • Add soy sauce and vinegar, stir.
  • Pour in egg, stir once or twice only.
  • Ladle into 2 bowls and serve immediately.

Notes

Substitute bok choy for the green cabbage.
