Pork Medallions with Brussels Sprouts; Hector

It’s no secret that we love Brussels sprouts.

I even grew them one year…. But that meant that I had to be working in the garden most of the winter. I work very hard in my potager from April through October. That’s enough.

I’ll buy the sprouts and let someone else do the wet, muddy, winter work.

Still love them….

Pork Medallions with Brussels Sprouts

Sliced pork tenderloin and Brussels sprouts cooked together in a brown sugar and hot mustard sauce. Serve over rice.

Ingredients

Scale
  • 14oz (400gr) pork tenderloin, sliced into 1″ (2.5cm) thick rounds
  • 1 onion, chopped
  • 2 tsp olive oil
  • 1416 Brussels sprouts, trim, cut in half through stem
  • 1 tbs brown sugar
  • 1 tbs Dijon-style mustard
  • 1 cup (8oz, 250ml) beef broth
  • 1 tbs cornstarch dissolved in 2 tbs water
  • 1/2 cup (3oz, 90gr) Basmati rice
  • 1 cup (8oz 240gr) beef broth

Instructions

  • Cook rice in broth according to package directions.
  • Heat oil in a large skillet.
  • Add onion and sauté until tender, about 5 minutes.
  • Move onions to the side of the skillet and add pork.
  • Brown about 2 minutes per side.
  • Add sugar, mustard, and stock; stir to combine.
  • Lay the Brussels sprouts around the pork, cut side down.
  • Simmer until sprouts are fork tender, about 10 minutes longer.
  • Dissolve cornstarch in water.
  • Move pork to the side, stir in cornstarch mixture, stirring until thickened.
  • To serve:
  • Put rice on a small platter.
  • Arrange pork in the center and Brussels sprouts around the pork.
  • Spoon sauce over and serve.

Notes

We used a mix of rice for this but I included Basmati for the nutrition info.

For another simple dish: Pork Medallions with Mushroom Sauce

Hector and I have been having a battle as to who is boss.

When he wants something – like a toy that is put away or to go outside, he comes to me, paws my legs and the chairs, and cries. If I don’t immediately give him what he wants he barks at me…. right in my face.

I will accept a bark if he needs to go outside urgently…. my other dogs did that. It’s better than the alternative mess.

But I won’t accept the clawing and barking just to get my attention because he can’t find his teddy. Or he just wants my attention.

Beating him senseless isn’t an option because he would think that was fun.

My new approach is to put him outside immediately if I think that might be the situation and to put him in his crate if I know it’s not.

Better, is when I can catch him before he starts ripping me to shreds and make him sit to be petted. That only works for a few seconds before the paws come up.

Apparently, that finally got through (or he’s really tired). He just came and sat by my chair – no barking or whining or pawing.

He got a long belly rub.

Now if there is only a repeat.

  1. Ironically, we had brussels sprouts tonight for dinner too! Steamed, with a little butter and lemon juice, salt and pepper. Very simple. Delicious though, with meat loaf.

    Beau does the paw thing. He doesn’t claw at me so much as just, the paw. Always the paw. Murphy used to do that when he had to go out. He’d come over and rest his paw on my forearm. Beau slaps it on me anywhere he can find a spot, for any reason, at any time. Repeatedly. It drives me nuts. I have no idea how to stop him. I’ve tried everything. I’d really like to train him to use the bell on the door trick to go outside. He never gives me the same signal twice. I’m just happy right now he’s got ‘sit’ down pat.

    • I’m trying to learn the difference between ‘play with me’, ‘get my toy for me’ and ‘I have to pee’. So far, no luck. But we’ve had the door open the last few days – that keeps him busy and leaves me in peace.

  2. Just saw the Dogster update. Thanks for sharing it with all of us. Glad you and your Pupper are adapting to each other and that Hector is keeping you happy. We have two older pups now, and they really bring so much fun and joy to our lives. Every night, about 9pm-ish, it starts becoming “Walkie Time”. And, to them, it’s the best part of the day.

    And, another thing, I made Wife get a dinner bell, so when she cooks something for dogs, she’ll ring the dinner bell and bring it to them. They get so happy when they hear it clanking downstairs. Oh, their eyes get happy, and they’ll be good for hour or two as they wait for her to call them & ring the dinner bell. And, even the Picky One who only wanted to eat Spaghettio’s before, now, she’ll jump out of bed and take off running toward the dinner bell.

    • My other dogs always responded to a knife tap on the cutting board. Hector is learning. He’s not nearly as food-crazy as my other dogs tho. I can put his breakfast in his bowl and he ignores it for a couple of hours before he eats. Maybe it’s because he’s an only dog and doesn’t need to worry about it.
      Training is still 2 forward and 1 back. He’s still a puppy, I tell myself a dozen times a day.
