Spinach Salad with Warm Goat Cheese

The theme for Monday posts in April is Small Salads.

We love salads, both big (main course) and small (first course or light lunch).

When we first moved to this side of the pond bottled salad dressing was a rare (if ever) find. It’s gotten to be more available here but I’ve never gotten out of the habit of making my own. It’s just so easy and there are no unpronounceable ingredients in it.

Try it with this month’s easy salads.

Spinach Salad with Warm Goat Cheese

The spinach is a slight twist on the traditional bistro salad served all over France, as is the addition of walnuts. The cheese is warmed to melting just before serving.

Ingredients

Scale
  • 4oz (120gr) fresh spinach, prepared for salad
  • 3oz (90gr) goat cheese
  • 1oz (30gr) walnut halves
  • 1 1/2 tbs Balsamic vinegar
  • 2 tsp Dijon-style mustard
  • 3 tbs salad olive oil

Instructions

  • Whisk together vinegar and mustard.
  • Slowly add olive oil, whisking constantly until vinaigrette is thick and creamy.
  • Add about half to the spinach and toss well to coat – tongs work well.
  • Taste, add more dressing as desired.  (I use it all)
  • Arrange salad on 2 plates.
  • Goat Cheese:
  • Slice the cheese into 1/3″ (1cm) thick slices.
  • Place cheese slices on a nonstick and/or parchment lined baking sheet.
  • Bake, 400F (200C) for 2 – 3 minutes, just until they start to melt.
  • Remove from oven and place half the slices on each salad.
  • Sprinkle the salad with walnuts and serve.

Notes

The goat cheese I used is log-shaped and wrapped in paper.  It will have a thin, whitish, rind that is edible and holds it all together when it melts.

  1. I have found goat cheese! I’m becoming more familiar with our local farms here and have found a small, local goat farm so we’ll have more variety this year than in the past. Happy camper here!

Having trouble with the robot challenge again!

    • I tried disabling the robot…. we’ll see. Congrats on the goat cheese! I have switched my yogurt to either goat or sheep rather than cow. Rumor has it that they are healthier. I have not done extensive research on the matter but I like the taste lol

  2. I love the small salad theme as it’s how I eat most of the year round so thankyou for some inspiration !
