The theme for Monday posts in May is…. ‘Medium’ Salads.
I had so much fun doing small salads for April I decided to do it again for May, but with slightly larger salads.
There are the salads that I make for myself for lunch or for the 2 of us when we are having a lighter main course.
The best thing about salads (and soup and risotto) is one can add or delete as the mood fits.

That’s it !

That salad looks delicious!! I’m not so big on honey mustard dressings, but hubs is. He would love this. I’d have to use a little vinaigrette on mine. 😉
I’m usually happy with the simple vinaigrette – but sometimes a change is nice. Actually, just a drizzle of oil & vinegar works.
I love anything mustardy and love salads…match made in heaven here for me !
Finally our lettuce is ready to pick. I’ve had to break down and buy it!
