The theme for Monday posts in June is…. Summer Soups.
These will be soups that can be made ahead and served cold or room temperature.
When the hot days of summer arrive I like to be able to do some, or all, of the cooking in the morning. Sometimes that means making the entire dinner and having it in the fridge, to be served cold. Other times I just make the sides and marinate the meat to be cooked later on the barbecue.
An easy soup, served chilled on a hot summer day, is always welcome.
