Easy Weeknight Fish Dinners

Does anyone remember Torsk?

We called it ‘Poor Mans Lobster’.

It was cod.

We all knew it was cod but calling it ‘Torsk’ made it so much more sophisticated. It was even labeled ‘torsk’ in the supermarkets. It was a lovely, long filet – just like I buy now here in France.

Differences Between Atlantic and Pacific Cod

When choosing cod, it’s essential to understand the differences between Atlantic vs Pacific cod varieties. While both are excellent choices, they have distinct characteristics that can influence your cooking.

Flavor and Texture

What’s the difference between atlantic vs pacific cod flavor and texture?

Atlantic cod tends to have a slightly sweeter flavor and a more delicate texture compared to Pacific cod. The milder taste of Atlantic cod makes it particularly suited for dishes with subtle seasonings or where the flavor of the fish needs to shine through.

Pacific cod, on the other hand, has a firmer texture and a stronger flavor, which holds up well in robust dishes with bold spices and sauces. This makes Pacific cod an excellent choice for hearty stews or heavily seasoned recipes.

Sustainability and Availability

From a sustainability perspective, both types of cod are subject to fishing regulations to prevent overfishing, but their availability can differ. Atlantic cod populations have faced significant challenges, making it crucial to choose sustainably sourced options. Pacific cod is generally more abundant, but it’s still important to select products certified by organizations like the Marine Stewardship Council (MSC) to ensure you’re making environmentally responsible choices.

Conclusion

Weeknight dinners can be both simple and delectable with the right recipes. Cod, whether Atlantic or Pacific, offers a versatile and flavorful option that can be prepared in various ways to suit any palate. From grilled and baked dishes to pan-seared and taco creations, cod ensures your meals are both nutritious and delightful. Understanding the differences between Atlantic vs Pacific cod enhances your cooking, allowing you to make the best choices for your recipes. 1. Torsk is totally unheard of by me ! I love the melted butter dipping idea….that was how I first ever experienced lobster, when I was 15 yrs old, and loved it of course !

  2. I like cod. It really is versatile and easy to cook.

I have to mention, last Friday night, our favorite watering hole had halibut on the menu. No one around here ever does halibut. I was so excited!! And it was so worth ordering because it was done perfectly. I love halibut anyway and it was filleted, prepared and seared on the grill with a light burre blanc. It was heavenly. I’m hoping they’ll have it more often.

  3. I like cod, too. I tend to do it more in the oven in winter, tho. I can get more creative with additions.
Years since I’ve had halibut. Sounds delicious!
