Grilled Shrimp & Veggies

The shrimp I get are cooked and peeled, which makes this a very quick and easy main course.

Ingredients

Scale
  • 5 medium shallots, peeled, cut in half
  • 1 large red onion, peeled, cut into wedges
  • 1 cup cherry tomatoes, cut in half
  • 1 tbs tarragon white wine vinegar
  • 1 tbs olive oil
  • 1 tsp paprika
  • 8oz (250gr) peeled, cooked shrimp
  • 3oz (90gr) feta, crumbled
  • 1/3 cup dry-cured Greek olives, pitted and roughly chopped
  • 2 tbs fresh, snipped tarragon

Instructions

  • Put olive oil, paprika, vinegar in a medium bowl, add all onion and shallots.
  • Toss well to coat.
  • Put into ‘grill pan’ (a metal or foil pan dedicated to use on the grill) NOT a mesh grill pan.
  • Cook over medium heat 15 – 20 minutes.
  • When onion and shallots are nicely browned, add tomatoes and shrimp to pan.
  • Stir to combine and cook another 5 – 8 minutes, until tomatoes start to melt.
  • Remove from heat and stir in feta, olives and tarragon.
  • Serve over barley, pasta, or rice.

Notes

I use a metal pie or tart pan for this.
If using raw shrimp add them when the shallots and onion are just starting to get tender, before adding the tomatoes.

We sold our old car today!

When we got a newer car 2 years ago it had never been our intent to keep the old one. But it had the trailer hitch….

We use the trailer a lot, and not just for typical trailer stuff. We use it to haul our bikes for our canal rides.

But we really didn’t need to pay insurance on a car that was parked 90% of the time. We can put a trailer hitch on the other one.

I digress…..

Mon mari decided to sell it the local way: big For Sale (A/V) sign in the window with a phone number. He used his phone number, of course.

The problem is he never answers his phone.

Actually, he never charges his phone….

Needless to say, the car has been for sale for several month now with no results.

Today he took that car (because he needed the trailer) to get some building stuff. He went to the local store and didn’t like what they had.

Then he went to a bigger town and bigger store. He pulled into the parking lot, parked, and decided he needed to move the car (for whatever reason).

He moved it next to a work van and went inside to get the pipes.

When he came out the owner of the van was waiting. He helped load the pipes than asked to look at the car.

He bought it.

A few hours later he and his wife came to the house to do the paperwork and pay, cash.

They were a nice, young couple and said they needed something better then his work van because of the kids. They have 2 and she’s pregnant with the 3rd.

She drove off in her ‘new’ car, very happy.

As were we.
