It’s November ! Time flies….
The theme for Monday posts in November is…. Eggs.
We love eggs, but not for breakfast.
Okay, we like them just fine for breakfast as long as we don’t have to cook them.
Neither of us want to take the time for more than a quick, toast & cereal, breakfast. There are things to do, dogs to walk and play with, stuff to get the day started.
Mon mari often makes himself scrambled eggs with mushrooms for his lunch.
I often make them for a first course / starter.
These are some of our favorites. Make them whenever you like, although a wine sauce may be a bit much first thing in the morning…. Brunch?

PrintGinger – Tomato Scrambled Eggs
This is a Chinese recipe. The combination may seem a bit strange but it really works well. Serve as first course or part of a Chinese meal. Or brunch…
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 2 servings 1x
- Category: First Courses
- Method: Skillet
Ingredients
- 3 eggs
- 2 medium or 1 large tomato, peeled and chopped
- 1 large shallot, finely chopped
- 1 tbs finely chopped fresh ginger
- 1 tsp sesame or walnut oil
- 1 tsp olive oil
- 1 tsp maizena (cornstarch) mixed with 2 tsp ketchup
Instructions
- Fry shallot in oils in a small, nonstick skillet until tender.
- Whisk eggs well.
- Add to shallots and fry briefly, breaking up with a spatula.
- Remove eggs when almost, but not completely, cooked.
- Put into a bowl and set aside.
- Add ginger and tomatoes to skillet and cook until tomato starts to break down and form a sauce, 7 – 10 minutes..
- Stir in cornstarch / ketchup mixture and cook until thickened.
- Return eggs to skillet, breaking up any large portions and gently fold into sauce.
- When heated through, serve.
Notes
The trick to keeping these creamy / soft is to only partially cook them initially, letting the hot sauce finish it at the end.
If using fresh tomatoes, peel by blanching in boiling water for 30 seconds.
If using canned, refrigerate or freeze any extra.

That’s it !

Did you know that the recipe doesn’t come through the email?
I love eggs for breakfast. Nothing fancy. Three eggs scrambled with a dollop of cottage cheese in them. Quick, easy and delicious 🙂 Quiche is my go to if I’m doing eggs for dinner though. You can put almost anything in it and it’s still quiche and yummy.
I thought I added you. That’s the problem with free services…. they don’t work right. If I made myself eggs for breakfast I would have dishes to do…. Way too much for morning lol
No, I’m getting the email, but not the recipe.
I’m good with washing one pan and soaking my bowl. I still have a dishwasher though so I let the bowl sit for awhile, then drop it in the dishwasher and my kitchen is clean 🙂 The pan is an 8″ OXO pan that is so slick, nothing sticks to it. It’s a cool little thing!
