I hated mushrooms as a young person.
To be fair to me, my only option was the rubbery kind that came in a can.
Even if they were on a pizza they started out in a can.
Remember all those recipes that used the Cream of Mushroom Soup from the red & white can? I used cream of chicken or cream of celery.
Fresh mushrooms, on the other hand, I have loved since I first tried them.

When I was an adult, married, cooking, etc. I remember telling my mother about a dish I had made with mushrooms – and explaining that I liked fresh mushrooms.
She then told me how, as a child on the farm, she would help her mother gather morels in the woods every spring.
I was shocked! This was a side of my mother I had never known.
Not only did she know what morels were, she knew how to forage for them and cook them.
I had only just discovered them at a fancy, expensive, gourmet food shop.
Still waters, and all that.
Oh… morels are not mushrooms. They are both fungi but morels are in the same family as truffles – not mushrooms.
I like truffles, too.
