Grilled Barbecued Tuna

Long, long ago in a land far, far away, I was introduced to canned tuna with ketchup.

I don’t remember the specifics of the incident, but, as I was in university, there was probably beer involved and it may have been very late at night.

For some equally vague reason I remember that I liked it.

While I would never embarrass myself by opening a can of tuna and squirting ketchup on it I do, frequently, use a drop or 2 of ketchup in the vinaigrette for a tuna salad.

And, of course, a bit goes into barbecue sauce.

Grilled Barbecued Tuna

The combination of flavors results in a slightly sweet/sour glaze with umami from the soy sauce.

Ingredients

Scale
  • 2 tuna steaks, 6oz (180gr) each
  • 2 tbs soy sauce
  • 2 tbs orange marmalade
  • 2 tbs ketchup
  • 1 tbs olive oil
  • 1/4 tsp ginger
  • 1/2 tsp rosemary
  • 1/4 tsp garlic powder

Instructions

  • Mix all ingredients for sauce and spoon over tuna.
  • Allow to marinate for 10 – 15 minutes.
  • To cook: Place on barbecue and spoon any remaining sauce on top.
  • Cook, with the cover partially or fully closed, without turning, for 8 – 15 minutes, depending on how you want it done.

Notes

If you get sushi-grade tuna you will definitely want to have this rare (it has to be graded to a higher standard so it is okay to eat raw).  Regular tuna we normally have medium.  We cook a 1 inch (2.5cm) thick piece for 10 minutes on hot charcoal, indirect heat, cover closed.
A grill basket or mat makes working with fish easier.

I remember, also a long time ago, when we lived in the Midwestern U.S., when the summer temps soared to 95F (35C) everyone complained. How were we going to stay cool? How to cope with such heat?

If we were working it was easier because offices were air-conditioned. Our house wasn’t. We were surrounded by big shade trees, but still…

If it was the weekend we did what everyone else did – headed to the Mall of America. A little shopping, a movie, and a leisurely lunch, all in air-conditioning, was a lovely way to avoid the heat.

The forecast is for Sunday to be 104F (40C) and Monday 106F (41C).

And I thought 95 was hot…

Hector doesn’t like it either. He runs from shade to shade. If his ball ends up in a sunny spot he just looks at me. ‘You threw it – go get it!’.
