The nice thing about cooking vegetables on the barbecue grill is there is a different flavor profile.
I normally wouldn’t have onions and tomatoes for a side dish in the winter, but, somehow, it just works when they’re done on the grill to accompany barbecued pork chops or chicken.
Summer is the perfect time to get more creative and have fun with your food.
Plus it’s easy.

We don’t often think of onion as a vegetable…. It is. Combined with shallots and tomatoes it makes a lovely side dish. I added a few shallots for more flavors.
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 2 servings 1x
- Category: Summer Vegetables
- Method: Grilling
Ingredients
- 2 – 3 medium shallots, more if they are small, peeled, cut in half the long way
- 1 medium – large onion, peeled, cut into 8 wedges
- 1 cup cherry tomatoes, cut in half
- 1 tbs white Balsamic vinegar
- 1 tbs olive oil
Instructions
- Put olive oil and vinegar in a medium bowl.
- Add onion, shallots and stir to coat.
- Put into a ‘grill pan’ and cook over medium heat 15 – 20 minutes.
- Add tomatoes to shallots and onion.
- Stir to combine and cook another 5 – 8 minutes.
- Remove all and serve.
Notes
Use 2 medium tomatoes, cut into wedges in place or the cherry tomatoes
Do not use a mesh grill pan. I have a metal ‘pie’ plate just for the grill that works well.
It all could be oven-roasted for 25 minutes with the tomatoes added for the last 5.
